I hope you have all had a wonderful Easter break and have been enjoying this beautiful weather we are having. I have been practising my snack making skills (working on my expert challenge) although I am still struggling to get my children on board with all our snacks being healthier. My husband and I are loving it though and we have tried and tested several recipes. The favourite so far have been some delicious blueberry muffins made using oats and raisins. I've been amazed how ingredients can be substituted and still taste delicious!

This week we are only 'at school' on Thursday and Friday so you will only find work for these days. We are finishing our Easter treat challenge, which you have hopefully been testing out over the holidays) and we will be updating our journals accordingly.
